We made homemade Won Tons for dinner tonight. We didn’t do anything fancy, but they were pretty good. I actually thought that they would be a pretty simple and easy meal to make on a Scout camp out.
We bought the Won Ton wraps at Wal*Mart, then took Cream Cheese and canned chicken and mixed it together, put a small amount in the middle of the wrap, closed it up, put it into the hot oil and let it cook. With a little modification, you could easily make them at camp. Basically you could use a Dutch Oven instead of a Fry Daddy and you’re good to go.
For Dessert we just filled them with Cream Cheese and dipped them in Strawberry and/or Chocolate Syrup.
The nice thing is that they were cheap to make, very filling, interactive to make and good to eat.
We also had Fortune Cookies, and if you’ve been following me and fortune cookies for a while you know my luck with them.
Well, I had two. The first one said that I would be getting a new home in an area full of sunshine in the next year (not sure that I really want to live in Florida) and I can’t find (or remember) the other one right now for some reason, but it had something to do with new opportunities coming up.

Quite sometime ago, I found a recipe for Stuffed Chicken Breasts that I tried in the Dutch Oven. We used Costco sized frozen chicken breasts and stuffed them with a mixture of cheeses and herbs.
They weren’t too bad, but they weren’t fantastic either. The cheese almost completely melted out of them so really we just ended up with chicken breasts with a large hole in the middle.
So today I decided to try it again, only this time I had a list of things in my head that I thought would make them better.
I enlisted the help of the entire family and we set out to make dinner.
We started by getting some chicken that wasn’t frozen and that wasn’t the size of a Turkey. We pounded them flat, placed a mixture of Ricotta, Mozzarella and Parmesan cheeses along with herbs. We rolled them up, wrapped them in bacon, browned them on the stove top for a bit, then put them in the oven to bake. The last several minutes we put them under the broiler to crisp the bacon a little more (my family prefers crisp bacon).
They weren’t that bad actually and the cheese actually stayed inside. We had some left over cheese so we just put it on top of the chicken and bacon as it cooked.
We had some scalloped potatoes and green beans along with it and for his Spanish class my son was required to make a Flan which he did and we had for dessert.

I know, I know, I promised to post some recipes and I haven’t done it yet. One of these days I will I promise, I will also finish posting the Christmas Stories, someday.
I did see this recipe on ABC4′s website and thought that it looked interesting. I think that I’m going to try it out.
